Baked Pollock with Mediterranean Dressing & Rice

Ingredients

2 fillets of pollock
120g rice
8-12 spears asparagus
2 tbsp oil

Dressing
4-6 sun-dried tomatoes
6-8 kalamata olives
2 cloves garlic, grated small handful dill, chopped
4 tbsp olive oil
Juice of 1/4th lemon

Method

1. Preheat the over to 180c
2. Mix the ingredients for the Mediterranean
dressing.
3. Line a tray with foil and pour the dressing over
the fish.
4. Bake for 25 minutes or until cooked through.
Add a little oil and salt to the asparagus, then
place it on the baking tray so it roasts for 15
minutes.
5. Cook the rice according to the package
instructions.
6. Remove the fish and asparagus from the oven.
7. Serve with fish with the rice and asparagus
