BLACK COD & BROTHY BUTTER BEANS
Ingredients

4 shallots, finely sliced 2 clove garlic, finely chopped100ml veg stock1 jar of 570g butterbeans plus theirstock Juice of 1/4th lemon 30g parmesan, finely grated3 rashers of streaky bacon, cut intochunks5g fresh parsley2 tbsp olive oilPreheat
Method
1. Preheat the oven to 180°C. 1.
Defrost the fish overnight, then pat it dry andseason with olive oil, salt, and pepper.

Roast the fish for 15 minutes, skin side up, toensure crispiness.

Meanwhile, heat 2 tbsp oil in a pan and cookthe bacon until crisp (about 5–6 minutes). Addthe shallots and garlic, cooking gently untilsoftened.

Stir in the jar of butter beans, including theirstock, and add 100ml of vegetable stock.Simmer gently for 5-10 minutes. 5.
Finish the beans with lemon juice, parmesan,and seasoning to taste.

7.Plate up by placing the fish on top of thebeans and garnish with chopped parsley.
