Burger with Katsu Mayo and Pickled Onions

Ingredients

2 fillets Yellowfin Sole
2 brioche burger buns
3 tbsp mayonnaise
2 tbsp katsu spice mix (or
medium curry spice)
Juice of 2 limes
ΒΌ lime (for serving)
1 red onion, thinly sliced
Lettuce leaves
Sriracha (optional)

Method

1. In a small bowl, mix the mayonnaise with the
katsu spice mix until well combined.
2. In another bowl, combine the sliced red onion
with the juice of 2 limes and leave to pickle in
the fridge.
3. Cook the Yellowfin Sole fillets according to
the package instructions.
4. Toast the brioche buns lightly if desired and
spread the katsu mayonnaise on the buns.
5. Layer with lettuce, pickled onions, and the
cooked fish fillets.
6. Drizzle with sriracha if desired!
