Healthier Fish and Chips

Ingredients

2 fillets Yellowfin Sole
300g new potatoes
Handful fresh mint, chopped
3 tbsp butter
160g frozen Peas
2tbsp crème fresh
Squeeze of lemon

Method

1. Add the potatoes to a pot of boiling water
and cook for 20-25 minutes until softened.
2. Place the fish in the air fryer and cook for 16
18 minutes until crispy and golden.
3. Lightly squash the potatoes with a fork and
mix the butter, half the mint and seasoning.
4. For the peas, cook as according to pack
instructions then add in crème fresh, half the
mint and squeeze of lemon.
5.Serve the fish with the minted new potatoes
and mushy peas.
