Marry Me Salmon Pasta
Ingredients
4 salmon fillets
6–8 sun-dried tomatoes, plus
2 tbsp of their oil
3 cloves garlic, minced
150ml double cream
80ml chicken stock
1 tbsp tomato paste
40g parmesan, grated
Juice of ¼ lemon
1 tsp paprika
200g pasta
Handful of fresh spinach
Method
1. Reheat the oven to 180°C. 1.
Cook the fish in a foil parcel for 20-25
minutes until tender.
2. While the fish cooks, heat the sun-dried
tomato oil in a pan over medium heat. Add
the garlic and cook until fragrant.
3. Stir in the paprika, chopped sun-dried
tomatoes and tomato paste. Cook for 3-4
minutes.
4. Deglaze the pan with the cream and stock,
stirring to combine.
5.Meanwhile, cook the pasta according to the
package instructions, then drain.
6. Add the parmesan, spinach and lemon juice to
the sauce. Stir in the drained pasta and flake
in the cooked salmon.
7. Finish with extra cheese before serving.
