Mild Peanut and Coconut Cod Curry

Ingredients

2 fillets Black cod
2 tsp mild curry powder
1 tsp turmeric
2cm knob of ginger, grated
2 cloves garlic, grated
1 can coconut milk
Handful of fresh coriander
2 tbsp peanut butter
1 pouch rice
2 tbsp sesame oil
2 tbsp soy sauce
70g mangetout
Handful of fresh spinach

Method

1. Defrost the fish overnight.
2.In a pan, heat 2 tbsp sesame oil over medium
heat. Add the ginger and garlic, cooking until
fragrant.
3.Stir in the spices and cook for 2 minutes. 3.
4. Add the peanut butter, soy sauce, coconut
milk, spinach and mangetout, stirring to
combine.
5. Place the fish into the pan, cover, and cook on
medium heat for 20 minutes, or until flaky.
6. Serve with rice, then top with fresh coriander.
