Salmon Summer Rolls with Chilli Dip

Ingredients

2 cans Salmon
6 rice paper sheets
Handful of mint
Handful coriander
1/2 cucumber, sliced thin
2 carrot, sliced thin
1/2 red Pepper, sliced thin
Soy sauce to taste
Sweet chilli dip, for serving
Sesame seeds, for garnish

Method

1. Finely slice the cucumber, carrots, and red
pepper.
2. Drain the canned salmon and set aside.
3. Fill a shallow dish with warm water.
4. Dip one rice paper sheet into the water for
about 15 seconds until soft and pliable.
5. Place it on a clean surface.
6. Arrange a small portion of salmon, sliced
vegetables, mint, and coriander in the center
of the rice paper, then drizzle with a little soy
sauce.
7. Fold in the sides, then roll tightly from the
bottom up to enclose the filling.
8. Sprinkle with sesame seed and serve with
sweet chilli dip for dipping.
