Smoked Alaska Salmon & Sweet Potato Croquettes


1 Very Large Sweet Potato or 2 Smaller ones-peeled & precooked
2 Tbsp Plain Flour
2 Spring Onions, very finely chopped
1/2 Tsp Garlic Powder
1 tbsp Smoked Paprika (sweet)
1 Tin of Wild Red Salmon- drained
Black Pepper & Flaked Salt

6 Tbsp Plain Flour or 6 Tbsp Panko Bread Crumbs

3 Tbsp Mayonnaise
3 Tbsp Thick Greek Yoghurt
1 Tbsp finely chopped chives
1 Tbsp finely chopped tarragon
1/3 Tsp Garlic Powder
1/2 Lemon-zest
Pinch of salt & black pepper


1. Preheat your oven to 200 Fan. Start by adding the pre-cooked sweet potato, flour, garlic powder and smoked paprika into a food processor, Blend until smooth.
2. Add to a bowl along with the Wild Red Salmon, finely chopped spring onions and season generously with salt and black pepper.
3. Roll the mix into fat cylinders using your hands and roll in plain flour or panko bread crumbs. Place onto a baking tray and bake for 15-18 minutes.
4. To make the dip simply add all the ingredients together into a bowl and whisk to combine.
5. Serve warm and with a squeeze of lemon juice of the croquettes.
