Smoked Alaska Salmon Waffles

Ingredients

200 g Smoked Alaska salmon, sliced
250 g flour
1 tsp baking powder
3 eggs
100 g butter, softened, plus more for the waffle iron
250 ml buttermilk
2 sprigs of dill
1 small organic lime
150 g yoghurt
Red pepper flakes
100 g lettuce
2 tbsp olive oil
Juice of half a lemon
½ tsp mustard
1 tsp Canadian maple syrup
Salt, freshly ground pepper (as much or as little as you’d like)

Method

1. Mix flour, baking powder, eggs, butter, ¾ teaspoon salt, ¼ teaspoon pepper and buttermilk until smooth. Wash dill, pat dry, remove the stems and finely chop. Cut a slice of smoked salmon into small cubes and mix into the batter. Add chopped dill. Bake in a greased waffle iron until golden brown.
2. Prepare the dip: wash lime in hot water, pat dry, grate some zest, halve the lime, and squeeze out the juice. Mix yoghurt with lime zest and juice, and season with salt and red pepper flakes.
3. Wash lettuce and spin dry. Mix oil, lemon juice, mustard and maple syrup and season with salt and pepper. Cover lettuce with the dressing.
4. Arrange the waffles with the remaining smoked salmon, the salad and the lime dip on plates, garnish with dill and serve.
