Surimi Super Green Salad

Ingredients

120g surimi, cut into chunks
½ cucumber, thinly sliced
120g edamame beans
½ green apple, thinly sliced
80g sugar snap peas, thinly sliced
Handful of fresh coriander,
chopped
2 tsp sesame seeds
Dressing:
2 tbsp rice wine vinegar
2 tbsp soy sauce
1 tbsp maple syrup
1 tsp fresh ginger, grated
3 tbsp olive oil
Juice of ½ lime

Method

1. Grate the ginger and whisk it together with all
the dressing ingredients in a small bowl.
2. Chop the cucumber, apple, and sugar snap
peas into thin strips.
3. Cut the surimi into bite-sized chunks.
4. Toss all the ingredients including the coriander
together in a large bowl.
5. Drizzle with the dressing and mix well.
6. Sprinkle with sesame seeds and serve
immediately.
