Wild Alaska Halibut with Brown Butter Sauce and Capers

Ingredients

• 75g (3oz) butter
• 4 x 100-150g (4-6oz) fillets wild Alaska halibut
• 4 tbsp capers, drained
• Freshly ground black pepper

Method

Heat the butter in a large frying pan until melted and bubbling.

Add the halibut fillets and cook them over a medium high heat, spooning the hot butter over them as they cook. They will take about 6 to 8 minutes, depending on the thickness of the fillets. When cooked, the flesh will be opaque and should flake easily when tested with a fork.

Add the capers to the frying pan and cook for a few seconds.

Serve the fish with the hot browned butter sauce spooned over them. Season with a little freshly ground black pepper (it’s unlikely that you will need salt, as the capers are salty).

Cook’s tip: Serve with lightly cooked green vegetables, such as green beans, sugar snap peas or broccoli and new potatoes. For a change try making this recipe with wild Pacific cod.
