Wild Alaska Seafood Salmon Sushi Bowl


1 x 100g can red or pink salmon, drained
1tbsp mayonnaise
2tsp sriracha, plus extra to top
2 spring onions, thinly sliced (whites and greens separated)
80-100g rice, I used sushi rice
50g cucumber, sliced and quartered
Handful of radishes, sliced (optional)
½ avocado, sliced
Sesame seeds and coriander, to serve


1. Cook the rice according to packet instructions. Once cooked, set aside and keep warm until serving.
2. In a bowl, add the salmon, mayonnaise, sriracha, whites of the spring onions and a generous pinch of salt. Mix until well combined.
3. Transfer the rice to a bowl then add the salmon mixture on top along with the cucumber, avocado and radishes. Garnish with sesame seeds, coriander and an extra drizzle of sriracha. Dig in!
